Abstract

Non-communicable diseases (NCDs) continue to increase in Indonesia and are significantly influenced by daily food consumption patterns, including the consumption of fast food high in Sugar Sweetened Beverages (SSB). University canteens play a strategic role as food providers that can influence the eating habits of students and the academic community. This activity aims to provide education to increase awareness and knowledge of canteen business owners at the Faculty of Medicine, Universitas Negeri Semarang (FK UNNES) regarding the inclusion of SSB content information in processed ready-to-eat foods. This activity is part of a series of community service activities with a socialization and training approach involving all canteen business owners. Data were collected through pre-test and post-test questionnaires to measure knowledge gains. The results showed that most business owners recognized the importance of nutritional content as a key aspect in food provision, followed by attention to ingredient composition and hygiene. The increase in the average knowledge score about SSB after the education program marked the success of this program in conveying important information regarding the health risks of excessive SSB consumption. These findings confirm that increased knowledge can be the beginning of behavioral changes towards healthier and more transparent business practices. Structured education and a participatory approach are considered effective in building business awareness. This program is expected to create a healthy canteen ecosystem at the FK UNNES, that supports consumers in choosing healthier foods and reduces the risk of non-communicable diseases (NCDs). Increased nutritional awareness and literacy among canteen operators are key to the successful implementation of a healthy canteen, which can serve as an example for other educational settings
